    It is wet-milled rice flour.

    Daedoo's rice flour products are produced in a 100% traditional way of making rice flour.

    There is no difference from ordinary soaked rice, except that it goes through a drying process for convenient storage and distribution.

  • Q [product] What is the difference between White Rice Flour and White Rice Flour(Pine)?

    In the case of White Rice Flour, it is a product made by grinding 100% soaked rice. It is the same product as rice flour that is used in general rice cake shops.

    In the case of White Rice Flour(Pine), it is a rice flour product for rice cakes that improves the softness of texture and delays aging by adding modified starch to White Rice Flour.

    In the case of Pine Soft, it is a starch product that improves the texture, prevents aging, and complements the shape.

    There are three types of products, Pine Soft-T, Pine Soft-202, and Pine Soft-C. Each product has different characteristics.

    In the case of Pine Soft-T and Pine Soft-202, they are made with tapioca-modified starch. Pine Soft-T makes the texture of bread chewy and soft, and Pine Soft-202 acts as a supplemental agent to compensate for the weakening of the solidity of Pine Soft-T.

    Pine Soft-C has superior moisture absorption compared to Pine Soft-T and Pine Soft-202. And It also improves the soft texture and delays aging.

    There is a difference in texture.

    The texture of regular rice bread is chewy and moist compared to wheat bread. Rice Flour Premix(Gold) contains vegetable oil which improves the chewy texture of rice bread to become soft.

    In rice flour premix for bread, products are generally classified according to their gluten content.

    Rice Flour Premix for Bread(강력쌀가루) contains 17% of gluten while Rice Flour Premix for All-Purpose(중력쌀가루) has 13% of gluten. Rice Flour for Cake(박력쌀가루) has no gluten at all.

    In the case of Rice Flour Premix for Bread, which has the highest gluten content, all kinds of bakery products can be made instead of wheat flour.

    As Rice Flour Premix for All-Purpose contains lower gluten content, it is possible to make softer bread and confectionery products.

    In the case of Rice Flour for Cake, it is a gluten-free product that does not contain gluten at all. You can make soft cakes or confectioneries which do not need gluten.

    With Bread Rice Flour, you can make voluminous white bread, lean french bread, and rich bread.

    On the other hand, you may use Cake Rice Flour when making castella, chiffon cake, scones, and cookies
